You’re going to do WHAT with that ZUCCHINI???

Cheesy Zucchini Fritters


2 medium sized zucchini (approx 2 cups), grated

2 eggs, beaten

1/2 cup all purpose flour

1/2 cup cheddar cheese

1/2 cup grated parmesan cheese

1/2 cup mozzarella cheese

1 tsp. Italian Seasoning

1/2 tsp. Garlic powder

Dash hot sauce (optional)

Salt and Pepper to taste

2-3 Tbsp. vegetable oil, for frying

Sour cream and Chives, chopped for garnish


Cut ends off each zucchini and slice each in half.

Grate the zucchini and place in paper towel and squeeze out excess moisture.

Beat the eggs in medium sized bowl. Add the zucchini, flour, cheeses, Italian seasoning, garlic powder, hot sauce, salt, and pepper. Mix well.

Heat vegetable oil in a large skillet on medium to high heat. Drop heaping amount of the zucchini batter into the skillet. (About 1/4 cup). Flatten a bit with spatula and allow to cook approx. 2-3 minutes on each side or until it turns golden brown.

Top fritters with sour cream and chives!
