Southern Style Bourbon Peach Cobbler
Ingredients for Peach Filling
8 medium fresh peaches, peeled and sliced into wedges
1/4 cup Bourbon
1 tsp. fresh lemon juice
1/4 cup white sugar
1/4 cup brown sugar, packed
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 tsp. cornstarch
Ingredients for Topping
2 cups all-purpose flour
1/2 cup white sugar
1/2 cup brown sugar
2 tsp. baking powder
1 tsp. kosher salt
12 tbsp. butter chilled and cute into small pieces
3/4 heavy cream, plus more for brushing
Cinnamon Sugar Topping
1/3 cup white sugar
2 tsp. cinnamon
Preheat oven to 425 degrees F. Place a large baking sheet covered in foil on the lowest rack in the oven in case of any overflow.
In a large bowl combine the peaches, bourbon and lemon juice. Add the sugars, cinnamon, nutmeg, and cornstarch. Stir to coat evenly and then place in 9x13 baking pan.
Bake the peach mixture in oven for 10 minutes. While the peaches are baking, combine the dry topping ingredients and whisk to combine.
Add the butter to the flour mixture and cut it in with a pastry blender or your hands until the mixture looks like coarse crumbs. Stir in the heavy cream and mix just until the dough comes together. The dough should be slightly sticky.
Remove the peaches from the oven and drop the dough topping over them in spoonfuls. Brush dough topping lightly with the heavy cream. Sprinkle the cobbler topping with the cinnamon sugar mixture. Bake until the crust is golden and a toothpick inserted into the crust comes out clean, about 25-30 minutes. Serve warm with vanilla ice cream!
