Bourbon and Honey Peach Preserves


6-7 peaches, chopped and peeled

1 cup honey

1/2 cup bourbon

1 tbsp. fresh thyme leaves

1/2 tsp. kosher salt

Cream cheese

Rustic flatbread crackers


In a food processor pulse the chopped and peeled peaches 5 or 6 times, leaving some chunks. Transfer to large saucepan. Add the honey, bourbon, thyme, and salt. Bring to a boil over medium-high heat. Reduce the heat to low, and simmer, stirring occasionally, until mixture is thick and reduced, approx. 1 hour. Cool completely. Spread cream cheese on crackers and spoon the preserves over cream cheese!
