You have me at Chipotle!

I'm always down for a delicious Meatloaf. I mean, really, how easy and fun are they to make! You get to throw all those yummy ingredients together in a bowl, roll up your sleeves and just mix them all together. Molding the loaf is like creating a true MASTERPIECE. You know how I absolutely love my spicy foods so I decided to throw together a Spicy Mexican Meatloaf! Yep, that's right..fajita seasoning and green chiles are just some of the ingredients in this loaf to get your tastebuds dancing. And wait until to try the glaze. It is the JAM!!

Spicy Mexican Meatloaf

Ingredients for loaf

2 pounds ground beef ( 80/20)

1/4 cup plain breadcrumbs

1 (4 ounce) can diced green chiles

2 eggs

1/2 small white onion, diced

2 tsp. garlic, diced

1 (1 ounce package) fajita seasoning mix

1/4 tsp. ground black pepper

Ingredients for Glaze

3/4 cup Catsup

2 tsp. chopped canned chipotle peppers

1/4 cup apricot jam

Instructions for Glaze

Mix all ingredients together in small bowl.

Instructions for Meatloaf

Preheat oven to 350 degrees F.

Place all ingredients in large bowl. With clean hands mix well and then place mixture on a large greased baking sheet or lined with a silicone baking mat. Mold the mixture into a loaf. Spoon half of glaze mixture on top of loaf and evenly spread all over top and sides.

Bake in oven for approx. 1 hour.

Remove from oven and allow to rest before slicing.
