You can NEVER eat just ONE TAMALE!

Cooking spray

1 box corn muffin mix

1 large egg

1/2 cup sour cream

1/2 cup canned cream corn

1 tbsp extra-virgin olive oil

1 tsp chili powder

1 onion, chopped

1 tsp ground cumin

Kosher salt

Fresh ground pepper

2 cloves garlic, minced

1/3 cup red enchilada sauce

1 cup shredded cheddar cheese

1 cup Monterey Jack Cheese


Preheat oven to 400 degrees F. Grease a large oven safe skillet with cooking spray. In a large bowl whisk together corn muffin mix, egg, sour cream and creamed corn. Transfer to skillet and bake 20 mins. and let cool.

In a large skillet heat oil over medium heat. Add onion, cumin, and chili powder and season with salt and pepper. Cook until soft approx. 5 mins. Add garlic and cook 1 more min. Add ground beef cook until done. Drain fat.

Poke entire surface of cornbread with a fork and pour over the enchilada sauce on top. Add the beef and top with cheeses.

Cover with foil and bake until cheese is melted about 20 mins.
