You Butter be Ready for Christmas

Roasted Garlic and Chive Butter


2 Garlic Heads

2 tsp. extra-virgin olive oil

1/4 tsp. salt

1/8 tsp. pepper

1/8 tsp. sweet paprika

2 sticks butter

1/4 cup chives, finely chopped


Preheat oven to 400 degrees F.

Peel away any loose, papery, outer layers around the outside of garlic head. Leave the head itself intact with all cloves connected.

Trim 1/4 of the garlic top off, leaving the cloves exposed. Place each garlic head onto a sheet of tin foil.

Drizzle with olive oil and season with salt, pepper and sweet paprika. Wrap in the foil and place onto a baking tray.

Roast for approx. 30 minutes or until soft inside.

Remove from the oven and allow to cool.

In a food processor combine roasted garlic, butter and chives. Pulse several times until smooth.

Place on sheet of plastic wrap and roll. Twist both ends tightly and place in the refrigerator to chill.
