1 1/2 cups warm water
1 packet active dry yeast
1 tbsp brown sugar
1 tbsp unsalted butter(melted)
1 tsp salt
3-4 cups all purpose flour
1 tbsp cinnamon
1 tbsp sugar
Everything Bagel seasoning(can use for pretzels too lol)
BAKING SODA BATH
1/2 cup baking soda to 9 cups water
Whisk yeast in warm water in bowl and allow to sit for approx. 1 minute then whisk the salt, melted butter and brown sugar.
Add the 3 cups of flour one cup at a time. Mix with dough hook attached to mixer until dough is thick. May need to add a bit more flour if the dough is still sticky.
Place dough on floured surface and knead for approx. 3 minutes and shape into a ball.
Cover with a towel and allow to rest.
Preheat over to 400 degrees F and line baking sheet with parchment paper
After you allow the dough to rest(15 mins) then cut dough in three sections.
Roll out the dough into long ropes(maybe 20 inches long or so.
Take ends and form circle and then twist then ends and press down into pretzel shape.
Bring the baking soda and water to boil and drop 2 pretzels at the time into pot.
Using slotted spatula lift pretzel out of water and let excess water to drip off.
Place on baking sheet and sprinkle some with the sea salt, some with the cinnamon sugar mixture and then some with the Everything bagel seasoning.
Bake for 15 minutes or until golden brown.
Serve warm with coarse mustard or cheese sauce!
