Double Delicious Lemon Scones with Lemon Glaze!

Ingredients for the Scones

4 cups all purpose flour

2 1/2 tbsp. sugar

2 tbsp. baking powder

2 tsp. salt

1 1/2 sticks of cold unsalted butter, diced

4 eggs, lightly beaten

1 cup cold heavy cream

1 tsp. vanilla

zest of two small lemons


Ingredients for the Glaze

1 cup confectioners’ sugar

2 1/2 tbsp. fresh lemon juice

1 tsp. vanilla


Instructions

Preheat the oven to 400 degrees F.

Line two baking sheets with parchment paper.

In the bowl of an electric mixer fitted with the paddle attachment mix the flour, sugar, baking powder, and salt. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the vanilla, lemon zest, eggs and heavy cream and with the mixer on low speed, slowly add to the flour and butter mixture. Mix until just blended. The dough will appear lumpy.

Turn the dough out onto a flour surface. This is a very sticky dough. Roll out to desired thickness and using a round cookie cutter cut the dough.

Place them on the parchment lined baking sheet and bake for about 15-20 minutes.

Let them cool a bit before you glaze them.

To make the glaze, whisk together the confectioners’ sugar, lemon juice and vanilla until very smooth.

With brush glaze the scones.
