When Life Gives You Lemons.. you make a Delicious Garlicky Lemon Pasta! 🍋

1 lb. spaghetti noodles

14 cup reserved pasta water

2 lemons(3-4 tbsp lemon juice)

3 Tbsp. olive oil

3 cloves minced garlic

kosher salt

Coarse ground pepper

1 1/2 cup fresh Parmesan cheese

1/2 c. Panko bread crumbs

fresh parsley for garnish (optiona)


Boil spaghetti noodles in large pot well salted until al dente.

While pasta is cooking mince 3 garlic cloves. In a large skillet over medium-high heat, heat 3 tbsp. olive oil. Add Panko breadcrumbs and minced garlic and season with salt. Cook until bread crumbs are golden and garlic is fragrant, about 3 minutes. Remove breadcrumbs onto a paper towel lined plate and wipe out skillet.

Reserve at least 1/4 to 1/2 cup of the pasta water before draining. After draining the pasta place back in skillet and toss together with the Panko bread crumbs, lemon juice, pepper, 1/4 cup pasta water, and Parmesan cheese.

Garnish with fresh parsley( optional)
