When Life Gives you Lemons....
Lemon Parmesan Crusted Chicken

Ingredients for Chicken
1 cup olive oil
2 large chicken breast (boneless and skinless), sliced lengthwise
2 large eggs
1 Tbsp. Italian seasoning, plus more for garnish
1/2 tsp. Salt
1/4 tsp. Ground Black Pepper
1 garlic clove, minced
1 cup freshly grated Parmesan Cheese
3 tbsp. all-purpose flour
Ingredients for the Lemon Butter Sauce
6 tbsp. Butter
2 garlic cloves, minced
Juice from 2 small lemons
1/4 cup chicken stock
Pinch of Freshly Ground Black Pepper
Instructions
Heat oven to 350 degrees F.
Lightly pound chicken slices with meat mallet and set aside.
In a small bowl whisk together eggs, Italian Seasoning, salt, pepper, and garlic. On large plate stir together the parmesan cheese and flour. Dip chicken slices into the egg mixture and then dredge in the flour mixture. Heat olive oil in large skillet on high heat. Add the chicken and cook about 4-5 minutes on each side, or until crispy and golden.
Place chicken on paper lined plate to absorb excess grease and then transfer to a baking pan.
Meanwhile, in a separate saucepan, add the butter and garlic and cook until fragrant. Add the chicken broth, lemon juice and black pepper. Pour the sauce over the cooked chicken, coating evenly. Garnish with lemon slices and place in oven for 20-25 minutes.
Remove from oven and serve over bed of mashed potatoes.
