Creamy Tomato Sauce Pasta with Homemade Croutons

Ingredients for Croutons

1 small baguette loaf, cut into small cubes

1/4 cup olive oil

2 tbsp. Butter, melted

2 teaspoons Italian seasoning

1 tsp. garlic powder

3/4 tsp. fine sea salt

1/2 tsp. black pepper

Instructions for Croutons

Heat oven to 375 degrees F.

Mix all ingredients in small bowl. Add the cubed bread and carefully toss making sure well coated.

Place bread cubes on small baking sheet. Bake approx. 15-20 mins. or until golden, turning once halfway through cooking. Make sure you check so they don't burn.

Remove from oven and allow to cool slightly.

Ingredients for Pasta

1 pound penne pasta

1 tbsp. olive oil

1 tsp. garlic, minced

1 (14.5 ounce) can puréed tomatoes, undrained

1 tsp. dried Italian herb seasoning

1/4 tsp. salt

1/8 tsp. freshly ground black pepper

Pinch of red pepper flakes

2 tbsp. tomato paste

1 cup tomato sauce

1 tsp. Sugar

3 ounces cream cheese, softened

1/2 cup grated Parmesan cheese, plus more for serving

Instructions for Pasta

Heat olive oil in a large pan over medium-high heat. Add the garlic and cook for 2 minutes.

Add the undrained tomatoes, italian herb seasoning, salt, pepper, red pepper flakes, tomato paste, tomato sauce and sugar. Let it simmer for about 5-6 minutes.

Reduce the heat to low. Cut the cream cheese into small squares and mix it into the sauce.

Whisk in the Parmesan cheese. Let the sauce simmer, stirring occasionally. Bring large pot of salted water to boil. Add pasta and cook until al dente, about 10-12 mins.

Once the pasta is done, drain noodles, reserving about 1/2 cup pasta water and stir it into the sauce. Add the noodles to sauce and carefully toss coating the noodles.

Serve pasta topped with homemade croutons. Sprinkle with more Parmesan cheese if desired.
