What kind of Sandwich is that you ask? Well... that’s a LOADED QUESTION!

Loaded Cheesy Potato Sandwich

Ingredients
1 bag Simply Potatoes( or 2 large russet potatoes, diced)
1/2 small green pepper, diced
1 red mini sweet pepper, diced
1 orange mini sweet pepper, diced
1 small yellow onion, diced
8 slices honey wheat bread
1 tsp. Garlic, minced
4 tbsp. Butter
2-3 tbsp. Olive Oil
2 cups Triple Cheddar Cheese (White, Sharp and Mild)
Salt and pepper, to taste
1/2 tsp. Red pepper flakes (optional)
Salt and pepper, to taste
Sour cream, for dipping
Instructions
In large skillet heat the olive oil on medium to high heat. Add diced potatoes and onion. Sauté on medium high heat, stirring occasionally until sides of potatoes have browned. Approx. 10-15 mins. or until potatoes softened upbeat inside(may need to cover with lid).
Add the peppers, garlic, red pepper flakes, salt and pepper. Cook for another 5 mins. Then set aside.
Heat 1 tbsp. of butter on griddle. Place 2 slices of bread on griddle. Load potatoes on one slice of bread and cheese on other slice. Allow to brown and cheese to slightly melt and then using spatula flip the bread with cheese over on top of the slice with potatoes. Press down gently and allow to cook until cheese totally melted. Repeat. (Makes 4 sandwiches)
Dip in sour cream
