Cheese Tortellini with Peas Asparagus and Bacon


1 (16 oz.) package cheese tortellini

2 tbsp. Olive oil

1/2 small yellow onion, chopped

1 cup frozen peas

1 cup chopped fresh asparagus

2 cloves garlic, minced


Fresh cracked black pepper

1 cup heavy whipping cream

1/4 cup grated Parmesan cheese, plus more for serving

6 slices crispy bacon, chopped


Cook the tortellini according to package instructions, then drain and set aside.

Heat olive oil in large skillet over medium heat.

Add the onions and sauté until transparent.

Add the peas and asparagus. Sauté until asparagus is tender. Add garlic, salt and pepper. Mix well and place lid on skillet and cook for approx. 5 more minutes.

Pour in heavy cream and add Parmesan cheese, stirring continuously until cheese is melted. Taste and add more salt and pepper if needed.

Add the tortellini to sauce and carefully stir until thoroughly combined. Cook for a few more minutes.

Top with the crispy bacon and stir it in before serving. Sprinkle with more Parmesan cheese if desired.
