Rolo Brownie Bites!

Ingredients

1/3 cup all purpose flour

1 1/2 tbsp. Cocoa powder

1/4 cup packed light brown sugar

2 tbsp. sugar

1/4 tsp. baking powder

1/4 tsp. salt

3/4 cup semi-sweet chocolate chips

2 tbsp. butter

1 large egg

15 Rolo candies

1/4 tsp. Sea salt, for sprinkling


Instructions

Preheat oven to 350 degrees F. Generously grease a mini muffin tin.
Combine the flour, cocoa powder, brown sugar, sugar, baking soda, salt, and 1/4 cup of the chocolate chips in medium bowl. Whisk together and then set aside.
In a small microwave-safe bowl combine 1/2 cup of the remaining chocolate chips with the butter. Microwave for 25 seconds, stir for 15 seconds, and return to the microwave for another 15 seconds. Remove and stir until smooth. The mixture will be thick. That’s ok! Add in the egg and stir again until smooth and silky. 
Use a spatula to scrape the wet ingredients into the dry. Mix until completely combined.

Scoop out a tablespoon of dough and roll into ball and place in mini muffin pan. Continue with rest of dough! You should get about 15 brownie bites.

Bake for approx. 15- 20 mins. Don’t over-bake!

Remove from oven and allow to cool for about 3 minutes.

Unwrap 15 Rolo candies and place one in middle of each warm brownie bite center!

Sprinkle tops with sea salt!
