Spicy Spaghetti and Meatballs

Ingredients for the Sauce

1 tbsp. Olive Oil

1/2 cup diced yellow onion

3 cloves garlic, peeled and minced

1⁄4 tsp. Crushed red pepper flakes

1 (14.5 ounce) can crushed tomatoes

2 (26 ounce) jars Zia's spaghetti sauce (or your favorite red sauce

2 tbsp. Red wine

1/2 tsp. Dried basil leaves

1⁄4 tsp. Dried oregano leaves

1 tsp. Sugar

Salt and pepper, to taste

Ingredients for the Meatballs

1/2 cup olive oil

1/2 pound ground beef 1/2 pound spicy Italian sausage

1 large egg, lightly beaten

3 tbsp. fresh parsley, chopped

1/2 cup shredded Parmesan cheese, plus grated for serving

1⁄2 cup minced green onion, white part only

1-2 tsp. Minced garlic

1 tbsp. chopped fresh parsley

1/4 cup Italian breadcrumbs

1/2 tsp. Cayenne pepper

1⁄2 tsp. Kosher salt

1⁄4 tsp. Freshly ground black pepper

1 pound spaghetti pasta, cooked al dente, drained and tossed with olive oil

Instructions for the Sauce

Heat the olive oil in a Dutch oven over medium-high heat. Add the onions and cook until softened and translucent, about 7-8 minutes. Add the garlic and crushed red pepper and cook for about 1 minute. Add the crushed tomatoes, pasta sauce and red wine and stir. Season with basil, oregano, salt and pepper. Sprinkle in sugar and stir. Bring to a simmer over medium-high heat, stirring occasionally.

Instructions for the Meatballs

In large skillet heat olive oil on medium-high heat.

Place all ingredients, except spaghetti, in a large bowl. Using clean hands, mix together ingredients until combined. Form meatballs by rolling meat mixture (about 2 tbsp.) into medium sized balls. Place meatballs into skillet and brown evenly on all sides. Remove with slotted spoon and place on paper lined plate to absorb excess grease.

Then place meatballs into the simmering sauce one at a time. Allow to simmer for about 10 minutes and then gently spoon some of the sauce on top of then. Simmer, partially covered, for approx. 40-45 minutes, stirring occasionally to prevent the sauce from sticking to the bottom of the pot. Remove the sauce from the heat and serve immediately over the cooked spaghetti.

Sprinkle with Parmesan cheese!
