You’ve heard of the Goo Goo Dolls! Unfortunately, I can’t replicate their song and dance routines but I CAN come pretty darn close to replicating the yummy Goo Goo Cluster Candy!
The Goo Goo Cluster is a candy bar created in 1912 by Howell Campbell and the Standard Candy Company in Nashville, Tennessee. The disk-shaped candy bar contains marshmallow nougat, caramel, and roasted peanuts covered in milk chocolate.
Homemade Goo Goo Clusters
24 individual Werther’s soft caramel candies
48 mini marshmallows
1/2 cup lightly salted roasted peanuts
7 oz. container of semi-sweet chocolate melting chips
Preheat broiler to low. Unwrap all of the caramel candy pieces. Using your hands, press together three of the caramels and flatten into an irregular round shape and place on a baking sheet lined with parchment paper. Mold them into a cup shape to hold the marshmallows.
Place 6 mini marshmallows on top of caramel. Place under broiler for few seconds until lightly toasted.
Place approx. 6-8 peanuts onto the marshmallows and press them in so they fully adhere to marshmallows. Place the entire pan into the freezer until fully set.
Remove from the freezer and using a spoon, drip the chocolate on the tops of the candy. Return them to freezer and chill until set.
Flip the candies over and cover the bottom of the candy with chocolate. Place in the freezer again until set. Remove and let candy come to room temperature.
