Homemade Peanut Butter Ice Cream Sandwiches!

Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup light brown sugar

1 large egg

1 tsp. vanilla extract

3/4 cup creamy peanut butter(I used Peter Pan brand)

1 1/3 cups All-Purpose Flour

1 tsp. baking soda

1/2 tsp. salt

Your favorite Ice cream, softened

Sprinkles (optional)

Instructions

Preheat oven to 350 degrees F. Place parchment paper on two baking sheets.

Using mixer, beat together butter, sugars, egg, vanilla, and peanut butter until very smooth.

In small bowl whisk together the flour, salt, and baking soda.

Add the flour mixture to the peanut butter mixture, beating gently until well combined. Scoop about 1 1/2 tbsp. of cookie dough and rolls into ball. Place onto prepared baking sheets leaving 2" in between each cookie.

Using a fork carefully press down into each cookie making a cross-hatch design.

Bake the cookies for approx. 12 to 16 minutes, until they are just beginning to brown around the edges. Remove from the oven and allow to cool on baking sheet for at least 5-10 minutes. Transfer to a wire rack until cooled.

Place sprinkles in a shallow bowl and set aside.

When cooled add one heaping scoop of softened ice cream to flat side of one cookie.

Add second cookie to the top, flat side down and gently push down to seal the cookies and ice cream together.

Dip edges of the ice cream sandwich in the sprinkles.
