This Vegetable Dish is Bacon Me Crazy!
Maple Bacon and Sweet Onion Green Beans
6 strips thick sliced maple flavored bacon
1 1/2 lbs. green beans
1 medium sweet Vidalia onion, chopped
1 tsp. salt or to taste
1 tsp. Pepper or to taste
1/2 tsp. red pepper flakes
2 cloves garlic, minced
Juice of 1/2 lemon
Place green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, approx. 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain excess grease. Spoon off the excess bacon grease, leaving 2 tbsp. in the pan. Add the chopped onion to the pan and saute until very tender, approx. 5 minutes. Add garlic and red pepper flakes and saute until fragrant. Add the green beans to pan and cook until heated through. Return the bacon to the pan and pour in the lemon juice and toss. Season with salt and pepper.
