This sums up my childhood nostalgia along with riding on handlebars of bicycles and playing Barbies!
Chipped Beef in Béchamel Sauce on Toast
3 (2 oz.) packages of Buddig Corned Beef
4 tbsp. butter
1/4 cup all purpose flour
2 cups milk
1/4 tsp. Grated nutmeg
2 pinches ground cayenne
2 tsp. Dijon mustard
Salt and pepper to taste
Toasted Bread( I used leftover Brioche)
Chop up the Corned Beef and set aside.
Melt 4 Tbsp. butter in a saucepan over medium heat until foamy. Whisk in flour and cook for 1 minute.
Whisk milk into pan in a thin, steady stream until combined. Whisk in Dijon, cayenne and nutmeg. Season with salt and pepper. Add the chopped Corn Beef to sauce and cook until béchamel is slightly thickened, approx. 3 minutes.
Serve over the toasted bread!
