Summer Breakfast Flatbread!
Ingredients for the Flatbread
2 cups all purpose flour, leveled and unsifted
1/2 tsp. salt
3 1/2 tbsp. Butter
3/4 cup milk
1/2 tbsp. oil for cooking
Ingredients for Breakfast Toppings
6 strips bacon, cooked
1 tbsp. Butter
1/2 cup Parmesan cheese
3/4 cup mixed cheddar, shredded
1 tsp. Crushed Red pepper
1/2 tsp. Garlic powder
1 tbsp. Olive oil for brushing
4 fresh basil leaves without stems, for garnish
Mixed medley tomatoes for topping
Salt and pepper, to taste
Instructions for Flatbread
Combine butter and milk together in pan and heat on low just until butter is melted. Remove from heat and set aside.
Whisk together the flour and salt. Pour butter and milk mixture into flour and whisk until the dough is formed.
Place dough onto work surface sprinkled with flour. Knead for a few minutes until it is smooth. Add extra flour if the dough is too sticky.
Wrap with plastic cling wrap and allow to rest at room temperature for at least 30 minutes.
Lightly dust surface with flour. Cut the dough into 4 pieces. Roll each piece into ball and then roll out into an 1/8" thick round. It doesn’t have to be perfect!
Heat 1/2 tbsp. of olive oil in a non stick pan over medium heat.
Place one flatbread in the pan, cook for approx. 1 to 1 1/2 minutes. It will bubble up a bit. Press down and flip to other side. Cook for another 1 to 1 1/2 mins. It should have small golden brown spots on both sides.
Stack the cooked bread and set aside.
Instructions for Assembly
In skillet on low-medium heat melt tbsp. butter.
Crack eggs into small bowl along with Parmesan cheese, garlic powder, salt and pepper. Using fork or a whisk beat eggs briskly.
Pour eggs into skillet and cook until done.
Lay the flatbread onto baking sheet and lightly brush with olive oil.
Place 3 strips of cooked bacon onto each flatbread.
Place even amount of scrambled eggs onto each flatbread.
Sprinkle cheddar cheese on top of scrambled eggs.
Place slices of tomatoes on each flatbread.
Sprinkle with crushed red pepper.
Season with salt and pepper.
Garnish each with a basil leaf.
Cook at 450 degrees F. until cheese melted.
