This Grilled Cheese Rollup is the JAM!
The other day I was talking to my son's girlfriend about a Bacon Jam appetizer on the menu at her brother's restaurant in Albuquerque. She said it is absolutely to die for! A lightbulb went off in my head.. This gave me the most brilliant idea for a rollup recipe! Drum roll everyone...this is a whole new level of YUMMINESS and it may be what's on MY lunch menu everyday from here on out!
Grilled Cheese Bacon Jam Rollups
5 pieces thick sliced bacon
1 small yellow onion, finely chopped
2 shallots, minced
1 clove garlic, minced
1/4 cup light brown sugar
1/8 cup real maple syrup
2 tbsp. apple cider vinegar
1 tsp. chili powder
1/2 tsp. Cayenne pepper
6 slices white bread
1 cup freshly shredded Monterey Jack
1 cup freshly shredded medium or sharp cheddar cheese
4 tbsp. Butter
In a medium saucepan over medium heat, cook bacon until crispy. Transfer bacon to a paper towel-lined plate, reserving a tbsp. of bacon fat in the pan. When cooled a bit chop up bacon and set aside.
Reduce heat to medium-low. Add the onion and shallots to the pan and cook, stirring often, until the onions are caramelized, approx. 15 minutes.
Stir in the garlic, brown sugar, maple syrup, apple cider vinegar, chili powder, cayenne pepper and chopped bacon. Bring mixture to a simmer then reduce heat to low. Cook until the liquid has reduced and thickened, about 10 minutes.
Let cool a bit before making Rollups.
Preparing the Rollups
Using a rolling pin, flatten bread squares to about 1/4-inch thickness.
Spoon about 1 tbsp. of bacon jam on bread and spread out evenly.
Place some of the shredded cheeses on top of jam and carefully roll up tightly.
Melt 2 tbsp. butter in a large skillet over medium high heat. Working in batches, add 3 roll ups to the skillet, cooking until all sides are golden brown and the cheese has melted, about 3-4 minutes, adding more butter as needed. Repeat step with remaining three Rollups. Serve immediately!
