Spicy Moroccan Vegetable Couscous


3 tbsp. olive oil

1 large yellow bell pepper, chopped

1 medium red onion, chopped

2 carrots chopped into cubes

2 cloves garlic, minced

1/2 tsp. paprika

1/2 tsp. ground coriander

1/4 tsp. turmeric

1/2 tsp. celery salt

1/2 tsp. ground cumin

1/4 tsp. ground cinnamon

1/4 tsp. cayenne pepper optional, to taste

1 cup frozen peas

1 cup chickpeas, drained

1 1/2 cup chicken stock

1/4 cup fresh parsley, chopped

1 cup couscous, cooked

salt to taste

pepper to taste

Juice of 1 small lemon


In large skillet heat olive oil over medium heat.

Add the red onion, yellow pepper, and carrots and sauté for 15 minutes or until all the vegetables are tender. Add the garlic and sauté for 2 more minutes.

Add the salt, pepper, paprika, coriander, turmeric, celery salt, cumin, cinnamon, and cayenne pepper. Stir until fragrant. Add the frozen peas and cook for approx. 5 more minutes. Stir in the chickpeas and stock.

Add the chopped parsley and stir in the cooked couscous. 

Remove from heat and add fresh squeezed lemon juice.

Serve warm!
