Decadent Chocolate Cream Cheese and Walnut Filled

Cupcakes with Ganache Frosting

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 tsp. baking powder

1/2 tsp. salt

6 tbsp. butter, softened

3/4 cup sugar, plus 2 tbsp.

1 egg, room temperature

2/3 cup milk, room temperature

3 ounces cream cheese, softened

1 1/2 tsp. vanilla extract

3 tbsp. semisweet chocolate chips

2 tbsp. Finely chopped walnuts

Ingredients for Ganache

3/4 semisweet chocolate chips (I used Ghirardelli)

1/2 cup heavy cream

1/2 tsp. Espresso powder

Instructions for Cupcakes

Preheat oven to 350 degrees F.

Line 12 muffin cups with cupcake papers.

In a medium bowl sift together the flour, cocoa powder, baking powder, and salt, and set aside. Using a hand mixer, cream the butter and 3/4 cup sugar until pale yellow, approx. 1 minute. Add the egg and mix until just combined. Gently add half of the flour mixture and mix until incorporated. Mix in the milk. Add the remaining flour mixture and mix until combined. Set aside. Do not over mix batter.

In a small bowl, mix together the cream cheese, 2 tbsp., 2 tbsp. sugar, and vanilla. Stir in the chocolate chips and walnuts.

Fill the cupcake liners with enough chocolate batter to just cover the bottom. Add a dollop of the cream cheese filling to each and then top with remaining batter. (I used a knife to carefully smooth out top batter so it would not mix with filling.)

Bake for 20 minutes. When finished baking allow the cupcakes to stand in the pan for 5 minutes and then remove and allow to cool completely on a rack.

Instructions for Ganache

Place finely chopped chocolate and espresso into a heat-proof glass.

Heat the heavy cream on the stovetop until just simmering. (Do not allow to boil). Once simmering turn off the heat and immediately pour the warm cream over the chocolate.

Let sit for a few minutes before stirring.

Stir until smooth and silky.

Allow the cupcakes to completely cool and then dip each cupcake into the ganache, forming an even layer of frosting. Place in the refrigerator to set.
