Savory Spinach and Brie Crepe with Honey Sauce!

Ingredients

For the Crepe

2 large eggs

3/4 cup milk

1/2 cup whole wheat flour

1/2 cup all purpose flour

Pinch of salt

1/2 cup water

3 tbsp. Butter, melted

For the Filling

2 tbsp. Olive oil

2 garlic cloves, minced

1/2 tsp. Crushed red pepper flakes

1/4 tsp. Salt

1/4 tsp. Pepper

8 oz. fresh spinach

1/4 cup parmesan cheese

1 (8 ounce) brie wheel thinly sliced and rind removed

For the Sauce

3 tbsp. Honey

2-3 tbsp. Olive oil

2 tbsp. Fresh parsley finely chopped


Instructions

Browning the Butter

In small sized pan add the butter and heat over medium heat. Whisk continuously until brown bits appear on the bottom of pan and then remove from heat.

Making the Crepes

Combine all the ingredients in a blender or food processor. Add the browned butter and pulse again until well combined. Place the crepe batter in the refrigerator for approx. 30 minutes.

Heat a 7 in. non-stick pan. Add butter and allow to melt. Pour 1/4 cup of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 30 seconds and place on plate. Continue this with rest of batter. Then set Crepes aside.

Making the filling

Heat a large skillet oven medium heat and add 1 tbsp. of olive oil and the garlic. Add the salt, pepper and crushed red pepper and cook for approx. 2 minutes. Stir in the fresh spinach and cook for 5 minutes or until spinach is fully wilted. Reduce heat to low and stir in the parmesan cheese and then turn off heat. Remove skillet from heat.

Making the Sauce

Place olive oil and honey in a small sauce pan and whisk together over low heat. Keep warm until ready to use.

Finishing the Crepes

Wipe the skillet clean and heat over medium-low heat. Working with one crepe at time lay it flat in the skillet. Lay a few slices of brie on one half of the crepe. Layer on the spinach filling and then top with a few more slices of brie. Fold the crepe and allow Brie to melt. Then fold it over again to make a triangle. Cook for approx. another 2 mins. Repeat with remaing crepes until the brie and filling are gone. Remove the honey sauce from the heat and stir in the chopped parsley. Drizzle the crepe with the warm honey sauce!
