This ain’t the kind of Meatloaf my momma made!

Italian Style Meatloaf with Glazed Topping

Ingredients for Meatloaf

1 tbsp. Olive oil

1 tsp. Dried Thyme

1/4 tsp. Freshly ground pepper

1/2 tsp. Salt

1 small onion, finely chopped

1 pound lean ground beef

1 pound Italian sausage

1 egg

3/4 Italian bread crumbs

1/2 cup Parmesan cheese

1 1/2 tsp. Italian seasoning

3 cloves garlic, minced

1 tbsp. Dried Parsley

1/2 tsp. Smoked paprika

Ingredients for Glaze

1/4 cup tomato paste

2 tbsp. Warm water

1 1/2 tsp. White vinegar

2 1/2 Tbsp. brown sugar

1 tsp. Garlic powder

1/2 tsp. Onion powder

1/4 tsp. Freshly ground black pepper

1/4 tsp. salt

Instructions for Glaze

Mix all ingredients in small bowl until well combined and smooth.


Preheat oven to 350 degrees F.

Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat for approx. 5 minutes, until the onions are translucent but not brown.

In a large bowl, combine the ground beef, Italian sausage ,onion mixture, bread crumbs, egg, Parmesan cheese, Italian seasoning, parsley, and smoked paprika and mix lightly with a fork. You don’t want to mash the meatloaf or it can become too dense! Shape the mixture into an oval shape and place in small baking pan. Bake for approx. 40 mins. Spread the glaze on top of meatloaf and bake for an additional 20 mins. until or meat loaf is cooked through.

Serve on bed of mashed potatoes with buttered peas.
