Thinking of my Daddy at Christmas

Christmas always makes me feel a bit melancholy. The memories of my wonderful daddy at Christmas always puts a smile on my face! He absolutely LOVED Christmas! It was his favorite holiday! He loved watching me decorate the tree while listening to his favorite Christmas music. He was the happiest when his family gathered together enjoying the food and music and tons of laughter! It also reminds me of his FAVORITE COOKIE EVER! 😉

Toasted Pecan Shortbread Cookie


Ingredients

1 cup butter, room temp

1/2 cup packed light brown sugar

1/2 cup powdered sugar

1 1/2 tsp. pure vanilla extract

2 1/4 cups all-purpose flour 

1/2 tsp. ground cinnamon

1/4 tsp. salt

1 cup chopped pecans, plus more for rolling

Turbinado sugar, for rolling

Granulated Sugar for sprinkling

Instructions for Toasting Pecans

Preheat oven to 375 degrees F.

Place pecans on baking sheet and toast pecans in oven for about 7 mins. Remove from oven and set aside.

Instructions for Cookies

In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and powdered sugar together until nice and creamy, about 2-3 minutes and then beat in the vanilla extract. Add the flour, cinnamon, and salt and beat on low speed until thoroughly combined. Lastly, mix in the chopped pecans.

Turn dough out onto a clean floured work surface and cut dough in half. Mold each half into a 8-9 inch log. Wrap each log tightly in plastic wrap and chill in the refrigerator for a minimum of 1 hour. Chilling longer is even better!

Preheat oven to 350 degrees F. Line two large baking sheets with parchment paper. Set aside.

Mix turbinado sugar and pecans together on large flat plate or clean surface.

Remove dough logs from refrigerator and remove plastic wrap. Roll each log into the mixture, pressing down a bit so the mixture sticks to all sides.

Slice each log into 1/2 inch thick cookies and place cookies on baking sheets. Top each with larger pecan pieces.

Bake for about 12-14 minutes or until slightly brown around the edges. Remove from the oven and sprinkle with granulated sugar. Allow cookies to cool on the baking sheet.
