There are all different types of BOATS!

Like the DREAMBOAT or how about the LOVE BOAT and let’s not leave out the LIFEBOAT.. this dish is basically all three in one!


Garlicky and Spicy Italian Stuffed Zucchini Boats


Ingredients

4 small zucchini

3 cloves garlic, minced

1 small onion, chopped

2 small Roma tomatoes, chopped

3/4 cup diced ham

1/2 tsp. Fennel seeds

1/4 tsp. Red pepper flakes

1/4 tsp. Salt

1/4 tsp. Freshly cracked pepper

4 tbsp. Olive oil, divided

2 tbsp. Fresh parsley, chopped

1 tbsp. Dried Basil

1/2 cup mozzarella, shredded

1/4 cup Parmesan cheese

3/4 cup Italian or French bread, torn large pieces

Instructions

Preheat oven to 375 degrees F.

Place parchment paper on baking sheet and set aside.

Slice each zucchini lengthwise directly down the middle.

Carefully scoop out the flesh of zucchini and transfer to a food processor (I used my new mini food chopper). Pulse a couple times until finely chopped. Transfer to medium sized bowl.

Add the chopped onions to the processor and pulse a few times until finely chopped. Add onions to bowl with zucchini. Add the diced ham to processor and pulse a few times. Now add ham to bowl with zucchini.

Crush fennel seeds with a mortar and add to zucchini mixture along with the red pepper flakes, salt and pepper and set aside.

Heat 3 tbsp. of olive oil to medium sized skillet and stir in the zucchini mixture. Cook on medium-high heat for approx. 6-7 minutes or until much of liquid has reduced. Add the chopped tomatoes. Cook for another 3-4 mins. Remove from heat and set aside.

Add the bread pieces and chopped parsley to food processor. Pulse approx. 5 times. Transfer to the zucchini mixture. Add mozzarella and basil and stir.

Brush small amount of remaining olive oil to zucchini boats. Spoon a generous amount of zucchini mixture into the boats. Drizzle each with small amount of olive oil and top with more mozzarella and Parmesan cheese. Bake for 25 minutes.
