The WREATH has significant meanings!

For Mother’s Day it represents the “Circle of Life”.


The Circle of Life Breakfast Wreath




Ingredients

5 eggs

1/2 red bell pepper, chopped

1/2 yellow bell pepper, chopped

2 scallions, chopped

1/8 tsp. Garlic powder

1/8 tsp. Red pepper flakes

1 tsp. Parsley, divided

Salt, to taste

Pepper, to taste

8 slices bacon, fried

1 can (8 oz) Pillsbury crescents

1 cup sharp cheddar cheese, shredded

1 egg (for egg wash)

Hot sauce, optional


Instructions

Preheat oven to 375 degrees F.

In a bowl beat the eggs with the chopped peppers, scallions, garlic powder, parsley, red pepper flakes, salt and pepper. Cook the eggs in a skillet so that they're scrambled. Remove from heat and set aside. On parchment paper, lay out the crescent rolls in the shape of a star. Place a piece of cooked bacon on each of the crescent roll. Place half of the cheese around the ring. Add the scrambled eggs on top of cheese around the ring and then top with remainder of the cheese. Fold the crescents over the filling. Brush with the egg wash. Bake for approx. 20 minutes or until the crescents are cooked and golden brown.  Garnish with parsley and splash of hot sauce. (Optional)

Serve warm.
