Simplistic Croque Monsieur Sandwich
Ingredients for Sandwiches
6 slices sourdough bread
2 tbsp. softened butter
6 slices deli cooked ham
2 cups gruyere cheese, grated
1/2 cup béchamel sauce (see recipe below)
1/2 tsp. Herbs de Provence, for garnish
Ingredients for Béchamel Sauce
2 Tbsp. butter
2 Tbsp. flour
1 cup milk, heated
1/2 cup gruyere, grated
1/4 cup Parmesan cheese, grated
A pinch each of salt, freshly ground pepper, and nutmeg
Instructions for the Béchamel Sauce
Melt butter in a small saucepan on medium to low heat until it just starts to bubble. Add the flour and whisk until smooth, approx. 2 minutes.
Slowly add the hot milk, whisking continuously, until thick. Remove from heat. Add the salt, pepper, and nutmeg.
Whisk in gruyere and Parmesan cheese.
Instructions for Sandwich Assembly
Heat oven to 400 degrees F. Lay all of the bread slices on a clean work surface. Butter three of the bread slices and place butter-side-down on a baking sheet. Lightly spread Dijon mustard on those three slices of bread.
Sprinkle half of the gruyere cheese over the Dijon mustard.
Top each of those cheese-covered bread with 2 slices of ham and cover each evenly with more grated gruyere cheese, reserving about 1/4 cup cheese for final topping.
Lay on the remaining 3 bread slices on top and press down gently. Spread each top slice with 3 tbsp. of the béchamel sauce. Sprinkle with reserved gruyere cheese.
Bake until browned and bubbling on top, approx. 10 minutes. Then finish by broiling them for just a couple minutes. To serve, cut each sandwich in half diagonally. Sprinkle with Herbs de Provence.
