Blackberry Cobbler with Butter Crumb Topping

Ingredients
24 oz. fresh blackberries
1 cup granulated sugar
1/4 tsp. ground cinnamon
2 tbsp. cornstarch
3/4 cup water
1 tsp. vanilla extract
1 tbsp. fresh lemon juice
1 tsp. Lemon zest
Crumb Topping
1 1/2 cups all-purpose flour
1 tbsp. granulated sugar
1 1/2 tsp. baking powder
1/2 tsp. kosher salt
8 tbsp. cold butter, cubed
1/2 cup cold buttermilk
Instructions
Grease an 8-inch square baking dish. In a large saucepan, combine the blackberries, sugar, and cinnamon. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth and then stir into blackberry mixture. Add vanilla extract, lemon juice and zest and stir. Bring to a boil. Cook for about 5 mins. or until mixture thickens. Pour the mixture into the prepared baking dish and set aside.
In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter using a pastry blender until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Sprinkle topping onto berry mixture.
Bake for approx. 30 to 35 minutes or until cobbler is light golden brown. Serve warm with vanilla ice cream!
