1 package Phyllo Shells
1 Tbsp. Vegetable Oil
1 medium yellow onion halved and sliced
1 Tbsp. Butter
1 tsp. light Brown Sugar
Pinch of kosher salt
1/4 cup Fruit Spread, jam, jelly or Relish of any kind (I used Dickinson’s Sweet N Hot Pepper and Onion Relish)!
3 oz. Mascarpone Cheese
In medium to large skillet heat oil over high heat. Add onions and stir. Cook onions over high heat for approx. 5 mins. until they start to soften and break down. Reduce heat to medium and continue to cook onions until deep golden brown. Stir in butter, sugar and salt and continue cooking until sugar is fully dissolved.
Heat oven to 400 degrees F.
Spray a mini muffin tin with non stick cooking spray.
Place one puff pastry square into each space in the mini muffin tin.
Fill each pastry square with first 1/2 tsp. spread, 1/2 tsp. of mascarpone cheese and then 1/2 tsp. caramelized onions.
Bake approx. 15 mins until pastry is golden brown and cheese is melted.
Let pastry bites cool completely before serving.
