Homemade Sweet Biscuits with Strawberries and Whipped Cream

Ingredients for the Strawberries

6 cups strawberries, quartered

1/4 cup granulated sugar

Ingredients for the Biscuits

2 and 3/4 cups all-purpose flour, plus more for surface

1/4 cup granulated sugar

4 tsp. baking powder

1/2 tsp. baking soda

1 tsp. salt

12 tbsp. butter, very cold and cubed

1 cup cold buttermilk, plus more for brushing biscuits

Coarse sugar for sprinkling

Whipped cream

Instructions for Strawberries

Place the quartered strawberries and granulated sugar together in a large bowl. Mix with spoon and cover. Put in refrigerator until ready to use.

Instructions for Biscuits

Preheat oven to 400 degrees F.

Mix the flour, granulated sugar, baking powder, baking soda, and salt together in a large bowl. Whisk until combined. Add the cold cubed butter and cut into the dry ingredients with a pastry cutter until coarse crumbs form.

Pour the cold buttermilk on top. Fold everything together with a spoon or rubber spatula until dough comes together (the dough will be crumbly and that’s ok. Place dough onto a floured work surface and bring together with floured hands. You’ll need some extra flour as well. Using a floured rolling pin, flatten the dough into a rectangle, approx. 3/4 inches thick. Fold one side of the dough into the center, then the other side. Turn the dough horizontally and flatten it into a 3/4 inch thick rectangle again. Repeat same process one more time. Finally, rill dough into the final 3/4 inch thick rectangle.

Cut dough into 3-inch circles using a biscuit cutter. Roll out any scraps you have and cut out more circles until all dough used. It makes about 10-12 biscuits.

Place the biscuits on a baking sheet lined with parchment paper. Make sure the biscuits are touching.

Brush the tops with buttermilk. Bake for about 20-22 minutes or until biscuits are golden brown on top. Remove from the oven and sprinkle tops with coarse sugar. Allow to cool before assembly.

Slice the biscuits in half. Layer one half  with whipped cream, strawberries and  more whipped cream. Place other biscuit half on top and layer with strawberries and whipped cream. Serve immediately!
