"Stirring up the Pot" is not always a bad thing!

I absolutely LOVE Panera's Broccoli Cheddar Soup so I decided to make my OWN version!!
It turned out even BETTER than I expected. It was absolutely DELICIOUS! Care to join me? 😜
Sharp Cheddar Cheese Broccoli Soup
1/2 cup melted unsalted butter
1/2 medium onion diced
1 tsp finely chopped garlic
2 cups half-and-half ( instead of half and half you can use one cup of heavy cream and one cup of milk.)
2 tbsp all purpose flour
2 1/2 cups chicken stock or broth
1/2 lb broccoli chopped(about 3 cups)
1 cup carrots (baby carrots or julienne)
1/4 teaspoon nutmeg
pinch of allspice
2 cups grated sharp cheddar cheese
2 bay leaves
salt and coarse pepper to taste
Melt the butter in a large pot on medium heat.
Add the onions until soft and translucent.
Add the garlic and cook for a additional few minutes or until fragrant.
Whisk in 2 tbsp. of flour.
Add in the nutmeg and allspice
Heat for one minute stirring continuously.
Slowly pour in the chicken broth and stir to combine and add bay leaves
Add the half and half, increasing the heat a bit and whisk continuously bringing the mixture to a light bubble and allow it to thicken. approx. 5 minutes or so.
Reduce the heat to medium. Add the carrots and broccoli to the soup and let the mixture simmer until the vegetables are very tender. Stir occasionally as it cooks.
Remove from heat and add the cheese allowing it to completely melt.
Remove bay leaves.
Salt and Pepper to taste
Serve with Sliced Toasted Baguette pieces in soup
