Spreading some Good Luck to Everyone!
My Daddy used to say that Buckeye seeds bring good luck. He would carry his around in his pocket everywhere he went! I now have that infamous Buckeye and I'm pretty sure it brought me good luck from time to time! Reminiscing about it made me think of a yummy treat to make! I'm just gonna share some of that GOOD LUCK to all of YOU!
Dark Chocolate Buckeye Oat Bites
1 cup Creamy Peanut Butter (I used Jif)
4 tbsp. Butter, softened
1 tsp. vanilla extract
1 3/4 cup powdered sugar 1 cup rolled oats
2 tbsp. maple syrup Dash of sea salt
1 1/2 cups dark chocolate chips, melted
1 tbsp. Coconut oil
Cream the peanut butter, butter and vanilla extract together in medium bowl. Add powdered sugar and mix on low until totally combined. Mix in oats, maple syrup and pinch of salt. Scoop tablespoon sized pieces and roll into balls. Transfer to a baking sheet lined with parchment paper and chill until firm, about 20-30 minutes. Prepare the chocolate dip by then adding chocolate and coconut oil to a medium bowl. Melt in microwave in 30 second increments until melted, stirring in between. When chocolate totally melted and silky smooth set aside and allow to cool to room temp.
Remove the peanut butter balls from freezer.
Use a toothpick to dip the peanut butter balls into the chocolate. Leave a bit of the peanut butter exposed for that buckeye look. You can smooth area where the toothpicks left a hole by running small knife across the top. Chill in refrigerator to allow the chocolate to get nice and firm.
