Some call them Pecan Snowballs or Sandies..others say Pecan Meltaways but I call them..Irresistible!

Powdered Sugar Pecan Cookies...care to join me? 😜
1 cup unsalted butter
1 cup powdered sugar, plus more for coating
2 tsp. vanilla extract
1/4 tsp. salt
2 cups all-purpose flour
1 1/4 cup finely chopped toasted pecans
Preheat oven to 350 degrees F
Line a cookie sheet with parchment paper and arrange chopped pecans evenly in single layer and toast in oven for 7-10 mins. until fragrant.
In large bowl cream the butter and sugar together.
Add in the vanilla and salt.
Slowly add the flour and mix well.
Finally add the chopped toasted pecans and mix evenly through dough.
Scoop 1 tbsp. of the dough out and roll it into a ball and place on cookie sheet.
Continue until all dough has been formed into balls.
Place them on the cookie sheet lined with parchment paper about 1 inch apart.
Bake for 15 mins. or until lightly browned edges on bottom of cookie.
Allow the cookies to cool to touch then gently roll them in powdered sugar while still warm.
Allow them to cook completely and then coat them in powdered sugar again.
