Sweet fluffy pancakes are seriously so delicious but SAVORY pancakes are a great option as well. This is a universal delight. There are so many variations and with a bit of your own imagination, the options are just endless. You can eat these wonderful pancakes any time of the day.
Sharp Cheddar Bacon and Scallion Buttermilk Pancakes
2 cups all-purpose flour
2 tsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. Kosher salt
1/4 tsp. Freshly ground pepper, plus more
2 large eggs, at room temperature
1 1/2 cups buttermilk, room temperature
2 tbsp. vegetable oil, plus more for skillet
1 cup shredded sharp cheddar
3 scallions, thinly sliced, plus more for serving
Crisp-cooked bacon, chopped
Sour cream, for serving
Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl. Add eggs, buttermilk, and vegetable oil. Whisk until just moistened. (Do not over-mix and add more buttermilk if batter too thick.) Fold in the cheddar cheese, scallions and chopped bacon.
Heat a large nonstick skillet over medium. Drizzle skillet with just enough vegetable oil and brush evenly to coat pan. Pour about 1/4 cup batter per pancake onto skillet, spreading out with bottom of spoon in an even circle. Cook until edges begin to set, and flip. Pancakes should be golden on each side and cooked through. (I cut a few slits into pancakes with sharp knife to allow them to evenly cook.) Top with sour cream, more scallions, and pepper. Serve with more bacon slices if desired.
