Potatoes are Life!

I think I’ve mentioned to you before that I LOVE POTATOES! I could eat potatoes every single day of my life and NEVER get tired of them. Even better, there are so many different ways to make them. Today, I am making a wonderful oven-baked thick sliced potato called a Melting Potato! The reason behind the name has to do with their deliciously creamy “melt in your mouth” interior but yet still maintaining a crispy skin. You’ll want to make these all the time because they are so easy to make and so yummy!

Ridiculously Delicious Melting Potatoes


6 medium Yukon gold, skin on, 1- inch slices

1/2 tsp. Kosher salt, more to taste

1/2 tsp. freshly ground pepper, more to taste

8 tbsp. (1 stick) butter, melted

1 tsp. Dried thyme

1 tsp. Dried Rosemary

1 cup chicken stock or broth if you prefer

2 cloves garlic, minced

1 tsp. Smoked paprika

Fresh chopped parsley, for garnish


Preheat oven to 450 degrees F.

In a small bowl, bowl whisk together the melted butter, salt, pepper, thyme and rosemary.

Place the slices of potatoes in large bowl. Pour melted butter mixture over potatoes and mix well to coat each potato.

Place potatoes on large baking sheet.

Place in oven and roast for 15 minutes. Take out of oven and flip each potato and then back in oven to roast for another 15 minutes.

Meanwhile, mix together the chicken stock or broth and garlic. Remove the potatoes from oven and flip each potato over one more time. Sprinkle smoked paprika on top of potatoes and pour broth mixture over potatoes. Place back in oven and roast for another 15 minutes.

Remove from oven and drizzle with excess sauce. Season with more salt and pepper if desired and fresh chopped parsley.
