Deviled Eggs with Smoked Paprika and Bacon

Ingredients

Dozen eggs, hard-boiled

3/4 cup mayonnaise

2 tsp. dijon mustard

1 tsp. Sriracha sauce

1 tsp. Freshly squeezed Lemon juice

1/4 cup sweet pickles, chopped

1 tsp. Smoked paprika

3 slices cooked bacon, finely chopped

Kosher salt, to taste

1/2 tsp. Thyme

freshly ground black pepper, to taste

Hot sauce, optional


Instructions

Place the eggs in a large saucepan with an inch of water covering the eggs. Bring them to a boil and then remove them from the heat, cover the pan, and let stand for 20 minutes. Pour off the hot water and refill the saucepan with cold water. Let them sit in the cold water for at least 5 minutes. Crack and peel the eggs. Place in refrigerator for at least 30 mins. Cut the eggs in half lengthwise. Carefully remove egg yolks from the eggs and place in a medium sized bowl.

Add the mayonnaise, Dijon mustard, sriracha sauce, lemon juice, pickles, 1 tsp. smoked paprika, salt and pepper and mix thoroughly.

Gently fold in the almost all of the cooked bacon. (Reserve some for garnish).

With a spoon or a pastry bag fill the egg whites with the egg yolk mixture.

Top with bacon, smoked paprika and thyme!
