Spicy Honey Orange Glazed Chicken


4 Boneless Skinless Chicken Breasts, cut into bite-size pieces

2 Eggs, whisked

1/3 cup Cornstarch

1/2 cup Flour

Vegetable oil, for frying

Ingredients for Spicy Honey Orange Glaze

1 cup freshly squeezed orange juice, approx. 3-4 medium oranges

1/2 cup granulated Sugar

2 Tbsp. Rice Vinegar

2 Tbsp. Soy Sauce

1/4 tsp. Ginger

1/2 tsp. Garlic Powder

1/4 tsp. Pepper

1/4 tsp. Salt

1/2 tsp. Red Chili Flakes

1/2 cup honey

Orange Zest from 1 orange

1 Tbsp. Cornstarch

For Garnish

Green Onions, chopped

Orange Zest

Instructions for Spicy Honey Orange Glaze

In a medium pot, add orange juice, sugar, vinegar, soy sauce, ginger, garlic powder, red chili flakes, salt, pepper, and honey. Heat for approx. 5 minutes.

In a small bowl, whisk together 1 Tbsp. of cornstarch with 2 Tbsp. of water to form a paste. Add the paste to orange sauce and whisk together. Continue to cook for 5-6 minutes or until the mixture begins to thicken. Once the sauce is thickened, remove from heat and add the orange zest.

Instructions for Chicken

Place flour and cornstarch in a shallow dish. Add a pinch of salt. Mix well.

Whisk eggs in small bowl.

Dip chicken pieces in the egg mixture and then the flour mixture. Place on plate.

Heat 2-3 inches of vegetable oil in a large skillet over medium to high heat.

Working in batches, cook several chicken pieces at a time for approx. 4-5 minutes, turning often until golden brown. Place chicken on a paper-towel lined plate to absorb any excess oil. Repeat with remaining chicken.

Wipe out excess grease in skillet and add chicken back into the skillet and pour the sauce evenly over chicken. Simmer on low heat for a few minutes more. Serve chicken on bed of rice and garnish with chopped green onions and orange zest.
