Now this is what I call Steak and Potatoes!
Steak Bites with Garlic Aioli Sauce and Crispy Pan Potatoes

Ingredients for Steak Bites
1 large sirloin steak, cut into 2-inch pieces 1 tbsp. olive oil, divided
2 tbsp. Butter kosher salt and cracked black pepper
Fresh chopped parsley Ingredients for Crispy Pan Potatoes
1 large russet potatoes, rinsed and cut into small cubes
1 tbsp. white vinegar
1/4 cup bacon fat
Kosher salt and Fresh ground Black pepper
Ingredients for Garlic Aioli Sauce
3/4 cup quality mayonnaise ( I used Duke's brand) 3 tsps. Minced garlic
2 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. ground black pepper
Instructions for Crispy Pan Potatoes
Preheat oven to 450 degrees F. Line large baking sheet with aluminum foil and set aside.
Place potato cubes in a large saucepot and cover with water by 1 inch. Add generous amount of salt to pit along with the vinegar. Bring to a boil over high heat and then reduce to a simmer. Cook potatoes until fork tender, about 5-10 minutes. Drain the potatoes and transfer to a large bowl. Add the bacon fat to bowl with potatoes. Season with pepper and more salt to taste, then carefully toss with a large spoon until all potatoes coated. Place potatoes on baking sheet and bake in oven for about 30 minutes, flipping potatoes halfway through.
Instructions for Steak Bites
Heat a cast iron skillet over medium to high heat. Add the olive oil and butter to skillet and allow butter to totally melt. Add the steak bites in a single layer and cook for 1 minute. Flip or stir the steak for another 1-2 minutes or until desired doneness. Add potatoes to skillet with steak and garnish with the fresh chopped parsley. Dip in the garlic aioli sauce!
Instructions for Garlic Aioli
Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate for at least 30 minutes before serving.
