Nothing BEETS a Quick and Easy Salad

Beet and Spinach Salad with Cashews and Goat Cheese

Ingredients for Salad

4 beets ,cooked, sliced (I used a package of steam and peeled baby beets from Trader Joe’s)

5 oz. red butter lettuce and baby spinach blend (I used a bag from Trader Joe’s)

1/2 cup cashews, roasted

2/3 cup dried cranberries

2 oz. goat cheese

Ingredients for Honey Lemon Dressing

1/4 cup olive oil

2 1/2 tbsp. honey

2 tbsp. lemon juice freshly squeezed

Pinch of salt


In large salad bowl add the combine butter lettuce and baby spinach, roasted cashews, beets and dried cranberries.

In a separate small bowl, combine olive oil, honey, lemon juice and pinch of salt. Whisk thoroughly until combined. Pour the salad dressing over the salad and mix.  Do not add all of the salad dressing at once. Add just enough to coat the salad to your taste. You can always add the rest if needed. Top with crumbled goat cheese.
