So if there’s little time for breakfast but need a delicious snack look no further! It’s “BERRY” DELICIOUS!

Homemade Granola and Mixed Berry and Banana Parfait!


4 cups old fashioned oats

1 cup pecans, chopped

3 tsp. Cinnamon, some for sprinkle

1/2 tsp. Fine Sea salt

1/2 cup maple syrup

2 tsp. Pure Vanilla extract

1 cup coconut, shredded

2 large bananas, sliced

1 cup Fresh Strawberries, sliced in halves

1 cup fresh blueberries

1 cup fresh raspberries

2 cups whipped cream

Instructions for Granola

Heat oven to 350 degrees F. Line baking sheet with parchment paper.

In a large bowl combine the oats, 2 tsp. cinnamon, 3/4 cup coconut and sea salt until evenly combined.

In small bowl combine the maple syrup and vanilla extract until combined. Pour the mixture into the oats mixture, and stir until evenly combined.

Spread the granola out evenly on the prepared baking sheet. Bake for approx. 15-20 minutes, stirring once halfway through until the granola is lightly toasted and golden.

Remove from the oven and add 1/4 cup of the non toasted coconut and mix well. Allow to cool completely.

In large bowl add together blueberries, raspberries, strawberries and bananas. Set aside.

Assembling the Parfait

Place 1-2 tsp. of the whipped topping on bottom of glass. Add fruit mixture and then add granola. Repeat this a couple more times with the whipped topping, fruit, and then granola. Final topping will be the granola with sprinkle of cinnamon!
