Marshmallow Filled Chocolate Chip Cookie Cups with Ganache Drizzle!

3/4 cup (1.5 stick) butter, softened

3/4 cup packed light brown sugar

1/4 cup granulated sugar

1 large egg, room temperature

2 tsp. pure vanilla extract

2 cups all-purpose flour

2 tsp. cornstarch

1 tsp. baking soda

1/2 tsp. salt

1 cup semi-sweet chocolate chips

1 16 oz. marshmallow fluff

Ingredients for Ganache

1 4oz. Ghirardelli semi-sweet chocolate bar, finely chopped

1/2 cup heavy cream

Instructions for Chocolate Chip Cups

Preheat over to 350 degrees F.

In a large bowl using a hand-held mixer or stand mixer with paddle attachment, beat the butter, brown sugar, and sugar together on medium speed until combined and creamy. Beat in the egg and vanilla. Scrape down the sides and bottom of the bowl as needed.

In a separate bowl, combine flour, cornstarch, baking soda and salt. Add into the wet ingredients and beat on low speed until combined. Stir in the chocolate chips. Cover dough and chill for at least 30 mins to 1 hour.

Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes.

Spray mini muffin pan with non-stick spray.

Scoop dough into muffin tins (approx. 2-3 tbsp. each and press down firmly. Bake for approximately 15 mins. or until lightly browned but not completely done. Remove from oven and using a rounded end of wooden spoon immediately press firmly down in the center to create a well. Allow to cool for approx. 10 mins.

Fill the inside of cookie with the marshmallow. (I filled a ziplock baggie with marshmallow fluff and cut the corner to pipe out into cookie).

Drizzle Ganache over the marshmallow as well as cookie cup.

Instructions for Ganache

Place finely chopped chocolate into a heat-proof glass.

Heat the heavy cream on the stovetop until just simmering. (Do not allow to boil). Once simmering turn off the heat and immediately pour the warm cream over the chocolate.

Let sit for a few minutes before stirring.

Stir until smooth and silky.
