Greek Rotini Pasta Salad
Ingredients for Salad
1 (16 oz.) box Rotini noodles
1 European cucumber, sliced
1 pint grape tomatoes, sliced in halves
1/2 small red onion, thinly sliced
1 cup pitted black olives, sliced
1 medium sized green pepper, seeds removed and chopped
1/4 cup fresh parsley, chopped
5 oz. feta cheese, crumbled
Ingredients for Dressing
1/2 cup extra-virgin olive oil
3 Tbsp. red wine vinegar
2 Tbsp. fresh lemon juice
1 1/2 tsp. dried oregano
1 tsp. dried basil
2 tsp. minced garlic
3 tsp. honey
Salt and Pepper, to taste
Cook pasta to al dente according to package instructions. Drain and allow to cool.
Prepare the dressing by whisking together the olive oil, red wine vinegar, lemon juice, oregano, basil, garlic, honey, salt and pepper in bowl. Set aside.
Add prepared cucumber, tomatoes, onions, black olives, bell pepper and parsley to a large bowl. Then add the cooled rotini noodles.
Pour dressing over mixture in bowl. Toss and then add in the feta cheese and toss again.
Garnish with fresh parsley and season with more salt and pepper if needed.
