Roasted Tomato and Pepperoni Basil Pizza 👌🏻

Ingredients
16 oz. bag ready to bake Trader Joe’s pizza dough, room temp. (or you can make your own)
1 cup mozzarella cheese, torn apart
1 cup pizza sauce
5 oz. package of thinly sliced spicy pepperoni
1 cup fresh basil leaves
3 tbsp. Mixed Italian herbs
10.5 oz. fresh Cherry tomatoes, sliced in half
3 garlic cloves, peeled and minced
4 tbsp. Olive oil (for tomatoes and dough)
1/4 cup pitted Kalamata Olives
Sea salt
Freshly ground pepper
1 cup grated Parmesan cheese
Instructions
Preheat the oven to 400 degrees F.
On a baking sheet pan place the tomato halves in a single layer.
In small bowl mix together the olive oil, garlic, salt, pepper and mixed Italian herbs.
Drizzle mixture over tomatoes and toss to coat evenly.
Roast in the oven for approx. 30 mins. or until soft.
To make the pizza preheat oven to 450 degrees F.
On a lightly floured surface, roll and stretch the pizza dough into a 14-16 inch circle. Place the dough on a greased pizza pan.
Brush the dough with a very thin layer of olive oil. Evenly distribute the pizza sauce over dough.
Place the tomatoes and rest of minced garlic over the sauce. Distribute the pepperoni, mozzarella slices, and olives over the tomatoes.
Place the fresh basil leaves on top of the pizza and sprinkle Parmesan cheese and rest of Italian herbs over the top.
Place pizza in the oven and bake for 30-40 minutes or to your liking. The bottom crust should be crisp and the top should be slightly browned and bubbling. Allow to cool just a bit and slice!
