Let me give you the "LO DOWN" on tonight's dinner!

No need to order out when you can make this meal right in your own kitchen! It's quick, easy and delicious!

I had some leftover veggies and egg noodles so LO MEIN it is!

Quick and Easy Lo Mein


Ingredients for Sauce

4 tbsp. dark soy sauce

2 tbsp. light soy sauce

2 tsp. sesame oil

2 tsp. sugar

1 tsp. Ground ginger

1/2 tsp. Cayenne pepper

Ingredients for Lo Mein

1 (10 oz) package egg noodles

1 tbsp. olive oil

1 tbsp. Sesame oil

2-3 cloves garlic, minced

6 green onions, chopped ( white part too)

3 cups cremini mushrooms, sliced

1 large red bell pepper, sliced

1 cup carrots, julienned

1 cup snow peas

2 tbsp. Mirin

Instructions for Sauce

In small bowl whisk all of the sauce ingredients together. Set aside.

Instructions for Lo Mein

Cook noodles according to package directions. Drain and set aside.

Heat the sesame oil and olive oil in a large skillet. Add the green onions (white and green) and vegetables to the hot pan. Stir fry about 5-7 minutes or until fork tender. Add the mirin and stir. Add the cooked noodles and about half of the sauce. Toss well to combine. Add more sauce to your liking if needed. I had a bit sauce left over!
