My daughter and I took a trip to Victoria Canada and this is where I was introduced to the BEST EGGS BENEDICT EVER! We even had the Eggs Benedict with Fried Chicken at a place called the Jam Cafe. This place is MUST if you ever visit. All this talk of Bennies is making me hungry so I'll just have to make my own for now.


English Muffins

4 Fresh Eggs(yolks)

Heavy Cream

2 tsp White Vinegar

8 slices Canadian bacon

8 slices Bacon

Fresh chives


Dijon Mustard

pinch Cayenne Pepper

1/2 cup Unsalted Butter

pinch Salt and Pepper

1 tbsp Lemon Juice

Hollandaise Sauce

Fill a pan with approx. 1-2 inches of water then place a glass bowl over the pan (make sure it fits without touching water) and bring water to simmer.

Add the cream, egg yolks, lemon juice, mustard, vinegar and cayenne pepper to bowl and whisk until blended.

Reduce the heat and add melted butter and keep whisking continuously.

remove from heat and season with salt and pepper.


Cook the Bacon and Canadian Bacon in large skillet on medium heat turning on both sides until browned.

While Bacon is cooking Poach eggs by bringing water to boil and slowly drop in water for approx. 3-4 mins.(This varies with amount of water or preference of how you want the egg cooked--very runny etc.)

Toast the English Muffins and lightly butter and layer with Canadian bacon , bacon, egg, salt, pepper, paprika and hollandaise sauce.
