Labor Day around the corner, pools closing and I’m winding down my Summer Foods!
I’m still craving that sweet summer corn though. Hey, I have a great idea and I think you’ll like it!
Fried Sweet Yellow Corn with Bacon
6 slices bacon
1/2 small yellow onion, diced
4 cups fresh yellow corn kernels
1 tsp. sugar
1/2 tsp. Garlic powder
1/4 tsp. Smoked Paprika
Salt and Pepper, to taste
2 tbsp. chives, chopped
Place the bacon in a flat skillet. Cook over medium to high heat until crispy. Remove the bacon from the skillet and reserve 1 tbsp. of grease in pan. Set the bacon on plate lined with a paper towel to absorb rest of excess grease. Chop bacon into small pieces. Add the onions to skillet and cook for approx. 3 minutes or until onions translucent. Add the corn, sugar, garlic powder, smoked paprika, salt and pepper to the pan. Cook for 10 minutes, stirring occasionally, until corn starts to caramelize and brown on the edges. Stir the chopped bacon back into the corn. Top with chives and serve.
