Half Baked Chicken Cordon Bleu
2 lbs. chicken breasts, boneless and skinless
1/2 cup mayonnaise
1/2 cup dijon mustard
1 cup all-purpose flour
1 cup Italian bread crumbs
2 cups Vegetable oil, for frying
8 thin slices honey ham
8 slices of Swiss Cheese
1/2 cup white wine
4 tbsp. Butter
1 tbsp. salt
1 1/2 tsp. black pepper
1/2 tsp. garlic powder
Parsley, for garnish
Preheat oven to 350 degrees F.
Combine the flour, Italian bread crumbs, salt, pepper, and garlic powder together in medium shallow bowl.
Cut each chicken breast into halves lengthwise. Pound chicken lightly with the flat side of a meat mallet until they are even in thickness.
Whisk eggs in shallow bowl. Dip chicken into egg. Then coat each piece lightly with the mayonnaise and then lightly coat with mustard. Place chicken breast into flour mixture, and lightly coat each side.
In large skillet heat the oil to 350 F. Place three chicken breasts at a time into skillet and fry until light golden brown on each side. Place on a paper lined up plate. After all chicken breasts are fried place them into baking dish and layer with slice of ham and then slice of Swiss cheese.
In small saucepan melt the butter and remove from heat. Whisk in the white wine. Pour on top of chicken and place baking dish in oven. Cook for 20-25 mins.
Garnish with fresh parsley!
