It’s BEAN a long time since I went Camping

Cast Iron Skillet Beans with Tomatoes and Garlic


1 tbsp. olive oil

1 small onion, diced

1 15 oz. can Cannellini beans, rinsed

4 plum tomatoes, chopped

2 cloves garlic, chopped

1 tbsp. Maple syrup

2 tbsp. Brown sugar

2 tsp. red wine vinegar

Table2 tsp. Worcestershire sauce

Kosher salt

Freshly ground black pepper


Set up grill. Heat olive oil in the cast iron skillet over direct heat. Add the diced onions and cook until tender, approx. 4 minutes. Add the beans, tomatoes, garlic, maple syrup and brown sugar. Season with salt and pepper. Transfer skillet to indirect heat. Cook, stirring occasionally, until tomatoes break down, about 20 minutes. Remove from heat. Stir in vinegar and Worcestershire.
